Taking a wee break from the 101 Salad Project to showcase my other favourite lunch (or summer dinner): the lettuce wrap! Crunchy, elephant-ear-sized leaves of romaine take the place of bread and envelope the soft, meaty fillings providing an amazing contrast of fresh and hearty.
Smoked salmon or arctic char provides protein, is a healthy fat, and is high in iron. It's rich enough to not have to supplement it with any dressing or condiment -- here I season with capers, chopped green onion, and a sliced hard boiled egg with ground pepper.
The second version has a filling smoked salmon topped with Japanese seaweed salad from Qi health store on Roncesvalles.
Now onto turkey breast. I like the nitrate-free turkey, and I pile up a few lettuce leaves, cover them in a spread of spicy chipotle hummus, add on a few turkey slices then top with hot banana peppers. Folded in half, it fits nicely into a square tupperware and makes a great, protein packed lunch.
Sometimes I wrap the turkey around the lettuce instead with some chopped cilantro. Makes for a mean, fast snack attack!
